Chocolate Pineapple Chia Pudding

Chia pudding is my favorite way to consume these little powerhouse seeds. They are known as a superfood and for good reason! They are a good source of fiber, protein, and healthy fats and arguably one of the most versatile superfoods. There are endless pudding flavors and topping options to choose from, including this chocolate pineapple version!

Ingredients

  • 1 cup milk of choice (nutrition facts reflect whole milk)

  • 1/4 cup chia seeds

  • 2 tbsp cacao powder

  • 1 tbsp pure maple syrup

  • 1/2 cup canned pineapple tidbits or 3 rings

Instructions

  • Add milk, chia seeds, cacao powder, and maple syrup to a mason jar or other airtight container.

  • Whisk or shake ingredients to combine and refrigerate a minimum of 6 hours or overnight.

  • The next morning, remove chia pudding from fridge and spoon half of the pudding into a bowl or cup.

  • Top pudding with pineapple tidbits any any other additions you prefer.
